Healthy Pancake Recipe & Anniversary Party Success!
Who says being healthy means you can’t have pancakes!?
Health is about making great choices, community, and also having fun! It was such a great event, so many came out on their weekends to enjoy a delicious breakfast, good music, an inspiring workshop, and excellent company. At Sojourn, it is so important to celebrate and enjoy together - especially something so momentous as the 1st year in our Dimond location!
The workshop On Clarity & Why You Want It lead by Anna Scott was packed. We got an incredible response, so look out for more possibilities to work with Anna at Sojourn!
The most talked about topic at the Anniversary party last month were the PANCAKES!! So many practice members were telling us that they had not had pancakes in … however long… since they really committed to their health. This made us all so happy to hear that so many of our Sojourn Tribe is committed to their health - and not only does that mean the health of their spine - but that a healthy spine means that they make better choices for themselves across the board! (Keep reading for the recipe!)
One unpredictable surprise from the party was also so telling about who you are as a Sojourn Tribe! Thanks to DJ Bothsides for creating the soundscape for the event! He is the tops for contributing to the field and reading the room! The surprise was that people were more focused on having incredible conversations than they were on moving their bodies to the tunes. I was shocked because the music was so good, and also delighted to see so many people connecting and engaging. There weren’t any phones out, or sugar distractions… just real-ness! It was awesome! And I realized how rare that is outside this new culture we are co-creating together!
The overwehlming response from the Anniversary Party was that people felt so good after the awesome food and community. WoW! It’s so neat to be a part of a health-oriented community! What a gift!
If you want to get your brain dialed in to function better, here is a great recipe to start out your day! Below is the recipe with some modifications to ensure a delicious meal - served savory or sweet!
BulletProof Fluffly Pancakes (Serves 4)
1 ½ cups blanched almond flour
½ tsp baking soda
1 tsp cinnamon (Ceylon preferred)
¼ tsp sea salt
3 large pastured eggs, room temperature
¼ – ½ cup pure coconut milk
1 Tbsp unsalted butter (or coconut oil)
dash of stevia
2 tsp pure vanilla extract
¼ tsp apple cider vinegar
4 Tbsp MCT oil
1) Preheat griddle over medium heat.
2) Place all of the liquid ingredients into your blender, then place all of the dry ingredients on top. Cover and blend on low to start, then increase to high for 45 sec- 1 min.
3) Grease preheated griddle with butter or coconut oil.
4) Ladle a spoonful of batter onto the griddle to form a silver dollar size pancake (about 3” in diameter).
5) Flip once the batter starts to bubble
6) Repeat until you’re done with the batter
